   Vegetable Recipes  

 

 

Please enjoy one of the many delicious recipes listed in this section of the campus cafeteria. Many of these recipes were created by readers like yourself, others by searching the internet for something tasty, while others by one of the FitnessCollege.com professors. This page will continuously be updated with tasty new recipes, so check back often.

 

Corn and Black Bean Salsa

Ingredients:
15 oz. can black beans (drained and rinsed)
11 oz. can corn (drained and rinsed)
¾-1 cup chopped tomato
1-1
½ cup chopped green onion
3 tablespoons of olive oil
Freshly squeezed lime juice of 1 medium sized lime
1 teaspoon cumin
½ teaspoon sea salt
½ teaspoon ground black pepper
8 oz. can garbanzo beans (drained and rinsed) - optional
1 jalapeño pepper (minced) - optional

Directions:
Place all ingredients into a large bowl and mix well. Let sit for a couple of hours in the refrigerator. Serve with tortilla chips.
