Chicken with Mediterranean Style Chick
Peas and Artichokes

Ingredients:
6-8 oz. chicken breast
15 oz. can chick peas (also called garbanzo beans)
15 oz. can artichoke hearts - sliced
15 oz. can whole tomatoes - crushed by hand
2-3 oz. can sliced black olives
1 lemon - squeezed for juice
1 clove of garlic - minced
1 teaspoon cayenne pepper
1 teaspoon cardamom
1 teaspoon cinnamon
2 teaspoons tumeric
Sea salt
Ground black pepper
Directions:
Grill chicken.
Place all ingredients, other than chicken, into a medium-sized pot, over
medium-high heat. Stir frequently and let simmer approximately 10-12 minutes.
Place chicken onto serving plate and top with Mediterranean style chick peas and
artichoke mixture. It is that simple!!
This recipe is also delicious without the chicken. Any type of white fish (e.g.
tilapia, swordfish, snapper, etc.) may be substituted for the chicken.
